Rachel's Recipes
Granny Mac's Egg Custard
Learned how to make this while we were away. It is TOO easy! You just HAVE to make it.

Ingredients & Method

Fill up the kettle and set it boiling.

In a 1 litre/2 pint jug beat...

ONE egg

Combine with...

TWO tablespoons sugar

Combine with...

THREE tablespoons thickening (1 1/2 T cornflour/starch & 1 1/2 T custard powder)

Mix in...

FOUR tablespoons milk powder (skim or full it doesn't matter)THEN

Pour in boiling water (about 1-3 cups) and mix like crazy until the mixture thickens. Add more water if consistency is too thick. It's best to start with smaller amounts of water and add more until you reach the desired consistency rather than adding lots of water at first.
(If it doesn't thicken at all due to mixing too late just throw it in the microwave for one minute or so.)
