Banana Chocolate Chip Muffins
These are my latest food crave. The recipe is adapted from an e-cookbook I bought recently called: Simply Centsible Suppers by Crystal Paine.

Banana Chocolate Chip Muffins
Makes 12 muffins

1 1/2 cups flour (I've used a combination of both wholemeal and white flour.)
3/4 cup sugar
1 tsp. baking soda
1/2 tsp. salt
1 egg
1/2 cup Miracle Whip Mayonnaise
1 cup mashed bananas (approx 3 bananas)
1/2 cup chocolate chips

Mix flour, sugar, baking soda, and salt in a large bowl. Mash bananas. Mix egg, Miracle Whip and bananas together in a small bowl. Add to flour mixture. Stir just until moistened. Spoon into greased or paper-lined muffin tins using a 1/4 cup measuring cup as this fills the muffin tin to the correct height. Sprinkle with chocolate chips. Bake at 180C for 20-25 minutes or until lightly browned.
